It doesn’t matter, we usually say “xǐ shǒu jiān and cè suǒ”

Want to know about the subtle differences, though?

First of all, Yu4 Shi4 means “bathroom” – a room to take a bath/shower. So it could refer to a bathroom at home which has a bathtub, or a public bathhouse. It’s focusing on the “bath” part.

Ce4 Suo3 is the most common term to refer to bathroom/restroom/toilet/lavatory.

Xi3 Shou3 Jian1 is a more “modern” term, and it’s more civilized/polite/circumbendibus, considering all the bad implication a Ce4 Suo3 can have, because the literal meaning is “a room to wash hands”.

Just to confuse you even more, Wei4 Sheng1 Jian1 is another term often used to mean the same thing. It’s politeness is in between Ce Suo and Xi Shou Jian, and it’s more often used to mean a bathroom at home.
