I just want to ask; You say “Wu Can” is lunch. Have I also heard “wu FAN (rice)” used for lunch or am I not hearing correctly?

You’re right, “wu fan” is also lunch, same as “wu can”. But here “fan” doesn’t mean “rice”. It means “meal”.

why would a speaker choose to say “wu can” instead of “wu fan”? (“Fan” is also much easier to write!)

I guess it depends on the regional dialect。Correct me, if I’m wrong but if you head more to the north of China “wǔ fàn” is used often。And towards the south “wǔ cān” is used。
